    One of the most popular street food in Sri Lanka. But it’s not only street food. We can see fish rolls at their parties. All of the Sri Lankans love to eat rolls with a cup of tea. It has crispy skin with a flavorful filling. Some people used to make filling in different ways.

    How I steamed fish :

    Wash & cut the fish into small pieces. Put pieces of fish into the pot. Add 1 cup of water, 1 tsp of (salt & black pepper) close the lid until cooks. After crushed pieces of fish.

    How I made batter for the pancake :

    Add all-purpose flour, turmeric, 1/2 tsp of salt & 1 cup of water into the bowl. whisk well until make a smooth batter. Keep aside for the pancake.

    How I made filling of the rolls :

    Add 4 tsp of oil into the pan & heat in medium flame to make the filling.

    Add ginger & garlic paste, green chilies, onions, curry leaves & pandan leaf stir until golden brown.

    Add crushed fish, 1 tsp of black paper, chili flakes, cardamoms & 1/2 tsp of salt & saute for 2 minutes.

    Add mashed potatoes & mix it well. Remove filling from the pan & keep aside.

    How I fold & coat the rolls:

    Take pancake batter we already made & make pancake using that batter. (make the pancake the same way you would make the ordinary.)

    Place the pancake over a flat surface. Take full filling to the tablespoon & keep it at the bottom of the pancake. (it will be an easy way to fold the rolls)

    Fold in your side pancake over the filling. Bring both sides of the pancake to the middle & cover the filling.

    Next start rolling the pancake from the bottom & make sure your roll it tightly.

    Break the eggs into the deep bowl & beat them until smooth.

    Add bread crumbs to the dry plate.

    Next dip rolls in the egg, coat that rolls in bread crumbs & transfer it to the plate or tray.

    How I deep fried the rolls :

    Add 200ml of oil into the deep-frying pan.

    Let the oil heat. (add few bread crumbs to check the heat of the oil, if it sizzles then the oil is at the correct heat.)

    Put 2 rolls at once (it’s dependent on your pan size) into the pan & deep fry the rolls until they turn golden brown. (don’t burn the rolls)

    After golden brown, remove rolls from oil & Transfer the rolls on tissue paper to drain extra oil. Serve warm with ketchup.
