2 cups Paratha or godhamba roti (small pieces)

1/4 Cabbage

1/2 Leeks

1(large) Spicy capsicum

1 tsp Ginger (chopped)

2 tsp Garlic (crushed)

2 Green chilies

2 Large eggs

1 (sprig) Pandan leaves

1 (sprig) Curry leaves (chopped)

2 tbsp Oil

1 tbsp Chili flakes

1 tsp Black pepper powder

1 cup Spicy gravy
Directions
Kottu can be described as a delicious food that confirms the Sri Lankan identity. This is Sri Lankan most popular food and it is well known all over the world. This food contains all the nutrients so we can use this as a main meal. But many Sri Lankan take this as a dinner. There are several types of kottu that all of you can have. They are Chicken kottu, Vegetable kottu, Egg kottu, Beef kottu, Cheese kottu and etc.… I think this is one of the most memorable dishes to visit in Sri Lanka.

Add oil into the pan & heat in medium flame. |

Add crushed garlic, ginger, green chili, chopped curry leaves, pandan leave & fry until golden brown. (please don’t let it to burn.) |

Break the eggs into the deep bowl & whisk. |

Add eggs mixture into the pan & mix well. (In this step you can add any meat you like.) |

Add salt, chili flakes and black pepper & mix for 2 minutes. |

Next add carrots, beans, cabbage, leeks, spicy capsicum & fry until 3 minutes. |
