Sri Lankan Fish Bun

    How I made the dough:

    Dissolve the yeast & sugar in the warm milk. Keep aside for 5 minutes.

    Add flour, ½ tbsp of salt into a bowl & mix it well.

    Make a hole at the center of flour & add yeast mixture. (mix together until a soft dough is formed.)

    Knead the dough until it's soft. (Transfer the dough to a smooth floured surface knead until it's soft & elastic for 5 minutes by hand. Keep the dough in a warm place for 40 minutes until double size.)

    How I made the filling:

    Add 4 tsp of oil to the pan & heat in medium flame to make the filling.

    Add ginger-garlic paste, green chilies, onions, curry leaves & pandan leaves stir until golden brown

    Add crushed fish, black paper, chili flakes, cardamoms & saute for 2 minutes.

    Add mashed potatoes & mix it well. Remove filling from the pan & keep aside.

    How I made the bun:

    Deflate & roll the dough & cut into 4 pieces.

    Flatten a dough ball on the smooth surface using your palm & fingertips (make a nice circle shape)

    Place 2 tbsp of filling in the middle. Take the upper right side of the circle to the middle. Next, take the upper side of the circle to the middle & slightly pinch two edges together. Lastly overlap the bottom side of the circle to the middle & again pinch to make a triangle shape fish bun. (look at the following pictures)

    Place the fish bun on the baking tray with a baking sheet at least 2 inches apart. Cover the rolls until 30 minutes.

    After 30 minutes, egg wash the surface of the fish buns.

    Place in 180 degrees Celsius preheated oven & bake for 10-15 minutes until golden brown.

    Serve warm with ketchup.
